Belgian Waffles



And honestly,  didn’t really know what I was doing throughout it all. But eh, looked how great they turned out! Even better, Alison (the Belgian) loved them!

Last month, I moved into a new apartment (partly explains my online absence) and it's been awesome. My roommates are dope, the place is in good shape, the rent is cheap and it's a 10 minute bike ride to work. Except one thing. It doesn't have an oven! *Insert devasted emoji* So, how does yours truly compensate/remorse? With second hand electronic household appliances of course! My latest and to date best purchase was this waffle maker a Bulgarian women sold to me in the metro. 

According to Alison, we made Liège Waffles. In other words, these waffles were small, sweet and simple – probably like the people of Liège. As for the recipe, it’s not much of a Dulce y Natural original. Instead I tweaked a thing or two from Sweet and Sour’s recipe. This was my first time making waffles and I treated every step as a study because next time I'm going to (try to) veganify these waffle babies. I won't you down Alison! In the meantime, I'll leave you with the recipe we used and the photos we took in Alison's beautiful garden.

Total Time: 45 minutes

Makes: 8 waffles


  • 100 grams of butter
  • 150 grams of white sugar
  • 2 egg yolks
  • 200 mililiters of milk
  • 25 grams of baking powder
  • 250 grams of all purpose flour
  • pinch of salt
  • splash of vanilla


    In a small saucepan, melt the butter and egg yolks on low heat for 2-3 minutes. Mix very quickly. If the yolks soldifiy, it isn’t ideal but it’s okay. In a mug, nuke the milk for 1 minute. Afterwards, pour the baking powder into the mug. Quickly pour it into the butter and egg mix. Mix well. In a medium sized bowl, mix the flour, sugar and salt. Pour in fluffy butter, egg, milk and baking powder concotion you have just made. Mix very well and add a splash of vanilla. Let the batter rest for 30-40 minutes. When ready, heat up your waffle maker and pour 2 spoons of batter to make one waffle. No need to grease up the waffle maker. Takes about 2 minutes to bake a pair of waffle, but it also depends on the temperature you set.

Vitamin C Overload Juice

Lately I have been a little under the weather, attacked by a stomach virus. With a lot of sleep, Aquarius, vitamin C and Pepe’s love I am already feeling better.

I came up with this Vitamin C Overload Juice recipe a week ago for days like these. It is made of three simple ingredients - mangos, oranges and carrots. Now that I think about it, I should have been making it everyday as it may have protected me. Oh well, live and learn.

Total Time: 15 minutes

Makes: 1 cup


  • 2 carrots médium size
  • 1/3 mango ripe
  • 1 orange
  • handful ice cubes


    Chop the carrots, peel the mango and juice the orange but keep the pulp. Mix all the ingredients with a food processor until well blended and add the ice cubes last. Drink immediately while it is fresh and cold.
