DELICIOUS MOROCCAN CREATIONS

Makes: 15 bonbons
- 1/4 teaspoon orange flower water
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 100 - 120 ml almonds
- 100 - 120 ml pistachios
- 150 ml walnuts
- 50 dates, seedless
- 1 1/2 teaspoons fresh ginger, grated
- 1 1/2 teaspoons agave syrup
- pinch of salt
Preheat the oven to 200°C and cover an oven stray with parchment paper. Slice the almonds, place them on the tray and roast for 5 minutes. Chop the pistachios until tiny pieces and powder is left. Put it to the side. Chop the walnuts and grate the ginger. Except the pistachios, toss all the ingredients in a bowl and grind with a processor. Be careful with the orange flower water – the taste is very strong. When well mixed, pinch the paste and form balls. Now the pistachios! In order for the pistachios to stick well to the bonbons, I recommend dabbing your fingertips into agave syrup and lightly rub the bonbons. In any case, cover the bonbons in pistachios.
