If you ask me, everyone should know how to make a chocolate cake. It is a staple. A classic. And above all, it is the most useful dessert. It comes in handy when it is time to celebrate a friend’s birthday or your parent’s anniversary, to comfort after a break-up or to celebrate a new lover, job or home. Or, of course, when you just feel like it!
This cake is special. It serves all your needs – vegan and raw style!
CLASSIC AND VEGAN CHOCOLATE CAKE
Total time: 1 hour and 20 minutes
Makes: 1 cake
- 10 figs
- 2 teaspoons coconut oil
- 2 tablespoons cacao
- 60 seedless dates
Cut the figs and dates into halves, and then pulsate in a processor. In a bowl, combine all the ingredients and kneed it with your hands until the cacao is well blended in. Press the mix onto the base of a mould and refrigerate for an hour.
Originally, I made an “icing” for this cake but it came out too thick and sweet for my liking. One of these days I will make a light and fruity icing to better complement this cake. Pinky promise!
