Forest Fruit Pancakes


Pepe is the Pancake Master. There is no one that can prepare a better batter or flip a pancake so elegantly. On Saturday morning, I wanted to surprise him before his upcoming business trip. Frankly, I also wanted to steal his Pancake Master title.

I woke up early and prepared the batter, but by the time it was ready to fry the pancakes, he was awake and took over the stove (oh, poor me). Today, I can only take half the credit for these vegan and fruity pancakes. They are filled with berries – strawberries, blueberries and raspberries. I even added some pomegranates. They turned out so vivid and beautiful!

Pepe, you continue to live on as the Pancake Master. 

Who is the pancake master in your home?

Total time: 45 minutes

Makes: 45 pancakes


  • 1 tablespoon white vinger
  • 1 teaspoon baking powder
  • 1 pomegranate
  • 100 grams brown sugar
  • 15 grams flax seeds
  • 255 grams all purpose flour
  • 340 grams soy milk
  • 50 grams olive oil
  • handful of berries


    Precalentar el horno a 200°C.

    Except the fruit, mix all the dry ingredients in one bowl and all the wet ingredients in another. Then, slowly mix all the ingredients together. Add the fruits last. Let the batter rest for at least 20 minutes to rise.

    Grease the pan with a little oil and pour the batter, little by little. Fry on low heat.
