Apple and Almond Muffins

QUICK AND EASY BREAKFAST MUFFINS

Thanks to my busy schedule, today’s post is a short one.

I made these Apple and Almond Muffins for days like these – long, busy and all over the place.  I made the batch after dinner, washed the dishes from dinner while the muffins were baking and let them cool over night. By the time I woke up, they were waiting for me! They are great with a little of red berry jam.  

APPLE AND ALMOND MUFFINS

Total time: 45 minutes

Makes: 5 large muffins

Ingredients

  • 1 ½ teaspoons lemon juice
  • 1 egg
  • ½ teaspoon baking powder
  • 100 grams brown sugar
  • 170 grams applesauce
  • 190 grams all purpose flour
  • 30 almonds, chopped
  • 40 grams olive oil

Instructions

    Preheat the oven to 200°C. Mix all the dry ingredients in one bowl and all the wet ingredients in another. Then, slowly mix all the ingredients together. Grease the mold and pour the batter. Bake for 15 – 20 minutes.
