TWO FLAVORS IN ONE
Two months ago, I made Date Bonbons and they were a hit. Ever since, those that had a bite have been asking me to make more. When I saw Rosie’s truffles, I hurried to the kitchen to prepare my own. These energy balls are similar and did not disappoint. Like before, used an organic cocoa powder from Mundo Acroíris, a Spanish line of vegan foods.
CHOCOLATE AND STRAWBERRY ENERGY BALLS
Total time: 30 minutes
Makes: 12 balls
- 20 dates
- 60 almonds, toasted
- 2 tablespoon cocoa powder
- handful of frozen dried berries
- 1 tablespoon protein powder (optional)
Soak the dates in hot water for 10 minutes. Soaking the dates for more than 10 minutes will make them too soft and watery, making them difficult to roll into balls later. Drain the water, chop the dates into halves and process the dates until you have a smooth paste. In a coffee grinder, grind the almonds and frozen dried berries separately.
With a spoon, mix the almonds into the dates. If you wish, add the protein powder. After, divide the paste into two. In one half add the cocoa powder and the berry powder into the other half.
Finally, roll the paste into balls! I used half of each to roll one ball, but the choice is yours! Leave them in the refrigerator to chill and harden a little before eating.
