THE MAGIC OF ZUCCHINI
Uh, why didn’t anyone tell me zucchini makes smoothies so refreshingly awesome? You see my friends, underneath its handsome green and shiny skin, the zucchini is hiding a heck load of water and nutrients, without the strong green colour and honestly nasty taste of spinach. Next time you make a smoothie or juice, skip the spinach, kale, cabbage or whatever disgusting leaves you have been using. Give zucchini a try.
ZUCCHINI, STRAWBERRY AND MANGO SOY SMOOTHIE
Total Time: 10 minutes
Makes: 1 smoothie
- 1/3 zucchini
- 4 strawberries
- 1/2 mango
- 1 pack (100) grams cold soy yogurt
- 1 tablespoon honey/agave/maple syrup
- 1 handful rolled oats
Grate the zucchini, remove the strawberry leaves then peel and chop the mango. Put the rolled oats through a coffee grinder in order to have a fine powder. This will make the drink filling, yet smooth, free of clumps and easy to drink. Mix all the ingredients altogether with a food processor until well blended. Drink immediately!
