Wild Granola Bars

A glimpse on my blog, and you can probably guess that I like simple recipes. These Wild Granola Bars are no exception.

My mother gave me the recipe and originally they are made of peanut butter, but I replaced it with almond butter. I started with a saucepan of warm almond butter, then slowly and cautiously added oats and dried nuts. Then I added a little more. And a little more. By the end, I had added all the dried fruits I could find in my pantry and made a beautiful and wild concoction. What’s more, it’s vegan!

Total time: 1 hour 20 minutes

Makes: 12 bars, depends on thickness

  • 1 teaspoon cocoa powder
  • ½ cup water
  • 100 grams agave syrup
  • 100 grams dried fruits and nuts
  • 100 grams oats
  • 120 grams almond butter

In a bowl, mix the almond butter, agave syrup and cocoa powder. Pour the mix into a saucepan and heat over a stove. Use low-heat, mix often and pour little amounts of water when needed to prevent burning or sticking. Heat for 5 minutes or until smooth. Let cool for 2 – 3 minutes.

After cooling, add the oats, dried fruits and dried nuts. Mix well.

Pour the granola into a tray and spread evenly.

Refrigerate for minimum 1 hour. Cut into bars.
